In 2001 our baker Brigid, retired from the New York City Police Department as a Detective, after spending a career investigating homicides, corruption, and Asian gangs. Always desiring to open her own bakery, she was accepted into the New School?s Master of Baking and Catering program in NYC. Soon after completing her education she started Big Eyes Irish Bakery, a home based business in Putnam Valley, NY. Her Irish Soda Bread, scones, tea cakes and pies were sold at local farmer?s markets and festivals.
In 2004, the family relocated to Vermont, and the home bakery was established once again, this time in Mount Holly. The range of products increased to include cheesecakes, lemon squares, quiche and more. Big Eyes products were sold at the local stores , West River Farmer?s Market in Londonderry, Mount Holly Farmer?s Market and Cider Days.
In 2014, Brigid and her husband Paul, a retired NYPD Sergeant; began the process of looking to open a shop in the area. In October of that year, after three months of renovations, Big Eyes Bakery was opened at 28 Main Street in Ludlow. We’re now in our new location so come visit us at 126 Main Street, located just behind the Engel & Völkers Okemo office.
